Some gins are crafted to be consumed. Others are crafted to be remembered. Our recent tasting experience with Nisaki Gin fell firmly into the second category, a bold, flavour-forward spirit that doesn’t just sit in your glass, but completely owns the moment. And with World Gin Day around the corner, it honestly felt like the perfect time to discover a gin that is pushing the boundaries of what modern Indian craft spirits can look and taste like.

The first thing that catches your attention is the hypnotic colour-changing transformation. It’s playful, dramatic, and instantly conversation-starting. But what surprised us most was that once the visual spectacle settled, the liquid itself delivered something even more exciting – a seriously well crafted gin with depth, character, and a beautifully layered botanical profile.

Distilled in Goa using 16 organic botanicals, Nisaki feels expressive from the very first pour. The aroma opens with uplifting citrus peel and delicate floral notes of rose petals and lavender, creating a fragrant introduction that feels bright, elegant, and refreshingly modern.

The palate is where things get genuinely addictive. A vibrant citrus burst leads the way before soft coriander warmth, subtle tea-like complexity, and floral sweetness begin to emerge. There’s a silky texture to the spirit that makes it incredibly smooth, yet the finish carries enough spice and earthy warmth to keep things exciting till the very last sip. What truly impressed us was how effortlessly Nisaki balances creativity with serious craftsmanship. Many experimental spirits tend to focus heavily on aesthetics while compromising flavour. Nisaki does the opposite the visual transformation feels like an extension of the experience rather than the main attraction. The colour shifts add theatre, but the liquid itself is what keeps you coming back.

Among the expressions we tried, the Passionfruit edition was incredibly vibrant, bursting with tropical tanginess and citrus freshness that made it dangerously easy to sip. The Lychee Pink Peppercorn variant brought a completely different personality, juicy lychee sweetness wrapped in soft spice, floral hints, and a warm peppery finish that lingered beautifully.

And then came Pinkanté Nisaki’s gin-based Picante-inspired creation bringing together jalapeño heat, pineapple sweetness, and herbal citrus depth in a way that felt bold, edgy, and wildly refreshing.

As alcohol beverage enthusiasts, what stood out most was the emotion behind the experience. Nisaki doesn’t feel manufactured for trends; it feels intentionally designed for people who genuinely enjoy discovering flavour, experimenting with cocktails, and appreciating spirits that tell a story. It’s expressive, immersive, and unapologetically different.
