Ingredients:

  • 2 cups cooked bowtie pasta (cooled)
  • 1 ripe avocado, mashed

  • Juice of 1 lime
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red bell pepper, diced
  • 2 tbsp chopped cilantro
  • Salt and pepper to taste

Instructions:

Instructions:

  1. Mix pasta, corn, beans, pepper, onion, and cilantro in a bowl.
  2. In a separate bowl, whisk lime juice, olive oil (or chipotle mayo), and spices.
  3. Pour dressing over the salad and toss.
  4. Refrigerate and serve chilled.
