With a little imagination and a few pantry staples, those humble leftovers can transform into something truly crave-worthy. It’s time to give your leftovers a delicious second life.

Roti Quesadilla

Leftover rotis make the perfect stand-in for tortillas in this Indian-inspired quesadilla. Think melty cheese, spicy veggies, and a golden crisp from the tawa.

Ingredients:

  • 2 leftover rotis
  • ½ cup grated cheese (cheddar or mozzarella)
  • 1 small onion, chopped
  • 1 small capsicum, chopped
  • Green chilies (optional)
  • Chaat masala or garam masala

Method:

  1. Heat a pan and place one roti on it.
  2. Layer with cheese, onions, capsicum, chilies, and a sprinkle of spice.
  3. Cover with the second roti and toast on both sides until the cheese melts and the rotis are crisp.
  4. Slice into wedges and serve with mint chutney or salsa.

  • 2 leftover rotis, thinly sliced into strips

Method:

  • Mustard seeds, curry leaves

  1. Heat oil in a pan, temper mustard seeds, curry leaves, and chili.
  2. Sauté onions until golden.
  3. Add roti pieces, turmeric, and salt. Mix well and cook for a few minutes.
  4. Finish with lemon juice and coriander.

  3. Add milk, sugar, and cardamom powder. Simmer until the rotis soak up the milk.
